Chicken Kebabs with Peppers and Herbs


Chicken Kebabs with Peppers and Herbs Recipe:


- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

- 1 red bell pepper, cut into 1-inch pieces

- 1 green bell pepper, cut into 1-inch pieces

- 1 yellow bell pepper, cut into 1-inch pieces

- 1 small red onion, cut into 1-inch pieces

- 2 tablespoons olive oil

- 2 tablespoons lemon juice

- 2 cloves garlic, minced

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

- 1 teaspoon paprika

- Salt and pepper to taste

- Skewers (metal or soaked wooden skewers)


1. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, paprika, salt, and pepper. Mix well to create a marinade.

2. Place the chicken cubes in a shallow dish and pour the marinade over them. Toss the chicken to coat it evenly. Allow the chicken to marinate in the refrigerator for at least 30 minutes.

3. While the chicken is marinating, prepare the vegetables by cutting the bell peppers and red onion into 1-inch pieces.

4. Preheat your grill to medium-high heat.

5. Thread the marinated chicken cubes onto skewers, alternating with the bell peppers and red onion pieces.

6. Place the skewers on the preheated grill and cook for about 5-6 minutes per side, or until the chicken is cooked through and the vegetables are tender and slightly charred.

7. While grilling, you can baste the kebabs with any remaining marinade to enhance the flavor.

8. Once the chicken is cooked, remove the skewers from the grill and let them rest for a few minutes before serving.

9. Serve the chicken kebabs with peppers and herbs hot, garnished with fresh herbs if desired.
