Grilled Chicken with Vegetables Recipe:
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Assorted vegetables (such as bell peppers, zucchini, and onions), sliced
Instructions:
1. Preheat your grill to medium-high heat.
2. In a small bowl, mix together the olive oil, garlic powder, paprika, dried thyme, salt, and pepper to create a marinade.
3. Place the chicken breasts in a shallow dish and pour the marinade over them. Make sure the chicken is coated evenly. Allow the chicken to marinate for at least 30 minutes.
4. While the chicken is marinating, prepare the vegetables by slicing them into pieces that are suitable for grilling.
5. Once the chicken has marinated, remove it from the dish and discard any excess marinade.
6. Place the chicken breasts on the preheated grill and cook for approximately 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
7. While the chicken is grilling, you can also grill the sliced vegetables. Drizzle them with a little olive oil and season with salt and pepper.
8. Grill the vegetables for about 4-5 minutes per side, or until they are tender and slightly charred.
9. Once the chicken and vegetables are cooked, remove them from the grill and let them rest for a few minutes.
10. Serve the grilled chicken alongside the grilled vegetables and enjoy!
