couscous salad

 recipe for couscous salad:


- 1 cup couscous

- 1 1/2 cups boiling water

- 1 cucumber, diced

- 1 tomato, diced

- 1 red bell pepper, diced

- 1/4 cup red onion, finely chopped

- 1/4 cup fresh parsley, chopped

- 1/4 cup fresh mint, chopped

- Juice of 1 lemon

- 3 tablespoons olive oil

- Salt and pepper to taste


1. Place the couscous in a large bowl and pour the boiling water over it. Cover the bowl with a plate or plastic wrap and let it sit for about 5 minutes, or until the couscous has absorbed the water and is tender.

2. Fluff the couscous with a fork to separate the grains. Set it aside to cool completely.

3. In a separate bowl, combine the diced cucumber, tomato, red bell pepper, red onion, parsley, and mint.

4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.

5. Pour the dressing over the vegetables and toss to coat them evenly.

6. Add the cooled couscous to the vegetable mixture and mix well until everything is combined.

7. Taste and adjust the seasoning if needed.

8. Serve the couscous salad chilled or at room temperature.
