Moroccan Baghrir Recipe (Moroccan Pancakes):


- 2 cups fine semolina flour
- 1 cup all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 3 cups lukewarm water
- 1 teaspoon baking powder


1. In a large mixing bowl, combine the semolina flour, all-purpose flour, yeast, sugar, and salt. Gradually add the lukewarm water while whisking continuously to create a smooth batter. The consistency should be similar to that of pancake batter. Cover the bowl and set it aside to rest for about 30 minutes to allow the yeast to activate and the batter to slightly ferment.

2. After 30 minutes, you will notice small bubbles forming on the surface of the batter. This is a sign that the yeast is active. Stir in the baking powder, which will give the baghrir its characteristic spongy texture.

3. Heat a non-stick frying pan or griddle over medium heat. Lightly grease the surface with vegetable oil to prevent sticking.

4. Pour about 1/4 cup of the batter onto the hot pan. The batter will spread on its own and form small holes on the surface. This is what gives the baghrir its unique texture. Cook the pancake for about 2-3 minutes until the surface is covered with holes and the edges are set.

5. Baghrir is meant to be cooked on one side only, so there's no need to flip it. Repeat the process with the remaining batter, making sure to stir the batter before pouring each pancake to redistribute the bubbles.

6. Remove the cooked baghrir from the pan and place it on a plate. Repeat the process until all the batter is used, adding a little oil to the pan as needed.

7. Baghrir can be served warm or at room temperature. Traditionally, it is drizzled with a mixture of melted butter and honey. You can also top it with your favorite spreads such as Nutella, jam, or cheese. Fold the baghrir into quarters or roll it up and enjoy!
