jilbana with Lemon, Meat, and Black Olives


Moroccan Jilbana with Lemon, Meat, and Black Olives Recipe:


- 500g chicken (chicken breasts), cut into small pieces

- 1 medium onion, chopped

- 3 cloves of garlic, minced

- 1/2 cup black olives, sliced

- Juice of one lemon

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon turmeric

- Salt and pepper to taste

- 2 medium tomatoes, chopped

- Fresh chopped parsley for garnish


1. In a large bowl, mix the chicken pieces with the chopped onion, minced garlic, sliced black olives, lemon juice, olive oil, ground cumin, ground coriander, turmeric, salt, and pepper. Stir well to ensure the spices are evenly distributed.

2. Heat a deep pan over medium heat and add the chicken mixture. Cook, stirring regularly, until the chicken is cooked through and the flavors have melded, about 10-15 minutes.

3. Add the chopped tomatoes to the pan and continue cooking for an additional 5 minutes.

4. Cover the pan and let it simmer over low heat for 30-40 minutes until the chicken is well cooked and the flavors have come together.

5. Before serving, garnish the Jilbana with fresh chopped parsley.

6. Serve the delicious Jilbana with lemon, meat, and black olives with warm bread or well-cooked rice.
