Moroccan Salad

Here is a Moroccan salad, a specialty of Morocco, which is beautifully presented. The recipe is as follows:

Moroccan Salad Recipe:


- 2 large tomatoes, diced

- 1 cucumber, diced

- 1 red onion, finely chopped

- 1 green bell pepper, diced

- 1 red bell pepper, diced

- 1/2 cup black olives, pitted

- 1/4 cup fresh parsley, chopped

- 1/4 cup fresh mint leaves, chopped

- 2 tablespoons olive oil

- 2 tablespoons lemon juice

- 1 teaspoon ground cumin

- Salt and pepper to taste


1. In a large bowl, combine the diced tomatoes, cucumber, red onion, green and red bell peppers, black olives, parsley, and mint leaves.

2. In a separate small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and pepper.

3. Pour the dressing over the salad mixture and toss gently to combine all the ingredients.

4. Taste and adjust the seasoning if needed.

5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.

6. Before serving, give the salad a final toss and garnish with additional fresh mint leaves.

7. Serve the Moroccan salad chilled and enjoy!
