Ingredients:

- 4 large potatoes, peeled and cubed

- 1 red onion, finely chopped

- 1 red bell pepper, diced

- 1 green bell pepper, diced

- 1/2 cup pitted black olives, halved

- 1/4 cup fresh parsley, chopped

- 1/4 cup fresh cilantro, chopped

- 2 tablespoons olive oil

- 2 tablespoons lemon juice

- 1 teaspoon ground cumin

- 1/2 teaspoon paprika

- Salt and pepper to taste


Instructions:

1. Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 8-10 minutes. Drain and set aside to cool.

2. In a large bowl, combine the cooled potatoes, red onion, red and green bell peppers, black olives, parsley, and cilantro.

3. In a separate small bowl, whisk together the olive oil, lemon juice, ground cumin, paprika, salt, and pepper.

4. Pour the dressing over the potato mixture and toss gently to coat all the ingredients evenly.

5. Taste and adjust the seasoning if needed.

6. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to blend together.

7. Before serving, give the potato salad a final toss and garnish with a sprinkle of fresh parsley.
