recipe for rose and raisin pudding:
Ingredients:
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup rose water
- 1/2 cup raisins
- 1/4 cup cornstarch
- 1/4 teaspoon cardamom powder
- A pinch of saffron strands
- Chopped pistachios for garnish
Instructions:
1. In a saucepan, heat the milk over medium heat until it begins to simmer. Add the sugar and stir until dissolved.
2. In a small bowl, mix the cornstarch with a little water to make a smooth paste.
3. Slowly pour the cornstarch mixture into the simmering milk, stirring continuously to avoid lumps.
4. Add the rose water, cardamom powder, and saffron strands to the milk mixture. Stir well.
5. Continue cooking the mixture over low heat, stirring constantly, until it thickens to a pudding-like consistency.
6. Remove the saucepan from the heat and let the pudding cool slightly.
7. Add the raisins to the pudding and mix well.
8. Pour the pudding into individual serving bowls or a large serving dish. Allow it to cool completely.
9. Once cooled, refrigerate the pudding for a few hours until it sets.
10. Before serving, garnish with chopped pistachios.
