Here's a recipe for shawarma:

Ingredients:
- 500 grams of boneless chicken or beef, thinly sliced
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- 4 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- 1/2 teaspoon of turmeric
- Salt and pepper to taste
- 4 pita breads
- Toppings (such as lettuce, tomatoes, cucumbers, onions, and tahini sauce) 

Instructions:
1. In a bowl, combine the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, salt, and pepper. Mix well to create a marinade.
2. Add the thinly sliced chicken or beef to the marinade and make sure it's well coated. Allow it to marinate for at least 1 hour in the refrigerator, or overnight for the best flavor.
3. Heat a grill or a skillet over medium-high heat. Cook the marinated chicken or beef for about 5-7 minutes on each side, or until it's cooked through and has a nice char.
4. While the meat is cooking, warm the pita breads either in a toaster or in the oven.
5. Once the meat is cooked, transfer it to a cutting board and let it rest for a few minutes. Then, thinly slice the meat into strips.
6. To assemble the shawarma, place a warmed pita bread on a plate and add a generous amount of the sliced meat. Add your desired toppings, such as lettuce, tomatoes, cucumbers, onions, and a drizzle of tahini sauce.
7. Roll the pita bread tightly around the filling, similar to a burrito, and secure it with foil or parchment paper.
8. Repeat the process with the remaining pita breads and enjoy your homemade shawarma!

Note: You can customize the toppings and sauces according to your preference. Some popular additions include pickles, hummus, garlic sauce, and hot sauce. Feel free to experiment and create your own delicious combinations!
