Here's a recipe for a Moroccan-style mixed salad, also known as "Salade Composée à la Marocaine," which is a vitamin-packed dish:


2 tomatoes, diced

1 cucumber, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 green bell pepper, diced

1 small red onion, thinly sliced

1 cup cooked chickpeas

1 cup cooked lentils

1 cup cooked quinoa

1/4 cup chopped fresh parsley

1/4 cup chopped fresh cilantro

In a small bowl, whisk together the lemon juice, olive oil, ground cumin, salt, and pepper.

Pour the dressing over the salad ingredients and toss well to coat.

Sprinkle the chopped parsley and cilantro over the salad and toss again.
