Tajine with Bijiou


 Moroccan Fish Tajine with Bijiou Fish Recipe:


Ingredients:

- 1 kg Bijiou fish fillets (or any white fish fillets)

- 2 medium onions, finely chopped

- 3 garlic cloves, minced

- 2 tablespoons olive oil

- 2 tomatoes, diced

- 1 tablespoon tomato paste

- 1 teaspoon ground cumin

- 1 teaspoon ground paprika

- 1 teaspoon ground ginger

- 1/2 teaspoon ground turmeric

- A pinch of saffron threads (optional)

- 1 preserved lemon, cut into wedges

- A handful of green olives

- Fresh coriander or parsley, chopped

- Salt and pepper to taste


Instructions:

1. Heat the olive oil in a large tajine pot or a deep skillet over medium heat.

2. Add the chopped onions and minced garlic to the pot and sauté until they become translucent and fragrant.

3. Add the diced tomatoes and tomato paste to the pot and cook for a few minutes until the tomatoes start to break down.

4. Stir in the ground cumin, paprika, ginger, and turmeric. Add the saffron threads if using. Season with salt and pepper to taste.

5. Place the Bijiou fish fillets on top of the tomato and spice mixture in a single layer.

6. Arrange the preserved lemon wedges and green olives around the fish.

7. Cover the tajine pot and let it simmer over low heat for about 20-25 minutes, or until the fish is cooked through and tender.

8. Sprinkle the chopped coriander or parsley over the fish before serving.

9. Serve the Moroccan Fish Tajine with Bijiou Fish hot with crusty bread or steamed couscous.
